fast & easy ceviche

I’m always craving ceviche but I don’t particularly enjoy cutting the ingredients, squeezing a million limes, and waiting for it to be ready. Growing up my sisters and I would bargain on who did what (cutting veggies or squeezing limes) and now that I make it for myself, I decided to find the easiest way to make it. My husband doesn’t like seafood so unfortunately, I can’t make any trades with him. Ceviche is pretty much shrimp or fish with pico de gallo and lime juice so I decided to make it using Trader Joe’s ingredients because I love their pico. I made enough for one person/serving.

Ingredients:

1/2 container of Trader Joe’s Pico de Gallo

1/8 bag of Trader Joe’s Cooked Shrimp

1 lemon or lime

salt and hot sauce to taste

Bag of Soy & Flaxseed Chips (you can sub for any tostadas or tortilla chips)

 

Directions:

Mix all ingredients together! Scoop onto chips or tostadas as you please. (I would suggest cutting the shrimp to smaller pieces which I will do next time.)

Hola Lola!

Welcome to my blog! I would like to start by introducing myself. My name is Faviola and I live in Phoenix, Arizona with my husband, Ronan, and our miniature schnauzer, Zoey. I have four sisters and a niece (Esther, Celenia, Bertha, Marlene, and little Celine) that you will be reading about as we spend a lot of time together.
