fast & easy ceviche

I’m always craving ceviche but I don’t particularly enjoy cutting the ingredients, squeezing a million limes, and waiting for it to be ready. Growing up my sisters and I would bargain on who did what (cutting veggies or squeezing limes) and now that I make it for myself, I decided to find the easiest way to make it. My husband doesn’t like seafood so unfortunately, I can’t make any trades with him. Ceviche is pretty much shrimp or fish with pico de gallo and lime juice so I decided to make it using Trader Joe’s ingredients because I love their pico. I made enough for one person/serving.



1/2 container of Trader Joe’s Pico de Gallo

1/8 bag of Trader Joe’s Cooked Shrimp

1 lemon or lime

salt and hot sauce to taste

Bag of Soy & Flaxseed Chips (you can sub for any tostadas or tortilla chips)



Mix all ingredients together! Scoop onto chips or tostadas as you please. (I would suggest cutting the shrimp to smaller pieces which I will do next time.)

Everyone that has bleached their hair (even if it is just highlights) knows that it really does some damage. The first time I bleached my hair it was just highlights but those pieces would get tangled while my natural hair did not. Now I have ombre hair and I get massive knots on the bottom part if I don’t use the right products. I have listed my four favorite products that have helped my hair be healthier and less tangled.


Oligo Blacklight Shampoo

This shampoo has nutrients to restore your hair’s health and it is blue to help with toning it. Before I had the blonde I had done some box colors with red undertones so it was a nightmare to get those out. My natural color is ash brown so any time my roots showed, they looked gray compared to my current color. This shampoo really helps when I haven’t gone into the salon for awhile. I usually shampoo with regular shampoo and then use this. I leave it in for a few minutes before I wash it out. I bought it from my hairstylist ($20) but found it on Amazon for less ($16) so I buy it there now.


Hask Keratin Protein Conditioner Packet

My little sister told me about these because her hairstylist told her to do some deep conditioning at home before going in. You basically wash your hair then put this in and leave it for about 10 minutes. It is so easy to use and works well! You can feel the different immediately after using it. I have bought these at Target, Walmart, Walgreens, and on Amazon.

Paul Mitchell Skinny Serum

I remember thinking this was so expensive when I bought it but the bottle has gone a long way (like one bottle for two years). I apply this before I use any hot tools on my hair (straightening or curling) and it helps keep it smooth and shiny. The first time I bought this it was from my hairstylist and I paid way too much. I suggest checking Ulta or Walmart but you can also get it on Amazon.

It’s a 10 Miracle Leave-In Product

Again, this one I was hesitant about because it is a bit pricey. I spray this in my hair after I shower (before bed) and just sleep with it in. It did help with knotting which is what I bought it for but the best part is that the texture of my hair has improved dramatically. My hair was straight in the front and wavy in the back, now it is wavy all over which is great when I want to wear it down but don’t feel like straightening or curling my hair. Where to buy it: Walgreens, Target, Walmart, Amazon – just look for the best deal! The prices really fluctuate for this product.

My Review of: Trunk Club

I kept seeing an advertisement for Trunk Club on Instagram and I would just ignore it. Then one day I saw a cute outfit and decided to give it a go. There is a $25 styling fee but it goes towards your final purchase so I figured why not. Shipping and returns are free so there isn’t much to lose. You are charged the $25 styling fee when you confirm your order but you are not charged for the clothing you keep until you try it on and return what you are not keeping.

Zoey Trunk Club Box

First impression: I did a survey on my style, size, and budget. The stylist was very prompt and messaged me right away to get my trunk together. They ask for your Pinterest account which made me realize… anyone could put together an outfit for me if they saw my Pinterest account. I could even do it myself if I had the time. Sizes are so inconsistent from store to store that I have avoided shopping lately and decided I would have someone else do the work for me. (That’s my dog Zoey modeling with the box that she wishes she could chew on)

My trunk: My trunk did have a few pieces I really liked… but I was underwhelmed by the items. You have the option to select items you don’t want sent and your stylist will add new ones. I was STILL underwhelmed. The items ranged from $20-$180; $20 for a white t-shirt and $180 for an embroidered denim shirt. Here are photos of the items that were selected for me:

Arrival & First Look: The trunk got here in a few days and it came with a return label to return any items I don’t want within 5 days. I will only be charged for the items that I keep. I kept wondering how they would fit so many items into one box. This is how the items were packed:

Trying on: I tried these on for the photos I took because I wanted to share them with everyone! This ended up being very tiring as it was 100 degrees and Zoey kept photo-bombing me. The shoes that were sent to me did fit well so I did not wear them for these photos. I wore my own wedges because the flats that were sent to me looked funny. The jacket (pictured above) was incredibly comfortable because of the soft material but the sleeves were too long. I would have so kept it if it fit. Below I have photos of the outfits that did fit:

The first two are outfits I decided to keep and the last three are the outfits I decided not to keep. The dresses looked okay from the front but from the side they bubbled up, I think a belt might have helped. I had high hopes for the black 3/4 sleeve top because it had great reviews but it was not as flattering as I hoped.

Final thoughts: I decided to keep the jeans because they were really flattering and comfortable as well as the white t-shirt and the striped peplum t-shirt. Also it turns out that you can take the clothes you keep to Nordstrom for alterations. I think I made a mistake which was that during the Trunk Club survey I asked for simple (black and white) clothes and I expressed my desire to be more minimalist. I think I would have still liked more fun pieces! Overall I enjoyed this experience because if it wasn’t for the Trunk Club personal stylist I would have never tried on those jeans.
